Wedding Mints

2 8oz pkg softened cream cheese
1 1/2 cubes Parkay margarine (No Substitutes)
4 lbs. powdered sugar (maybe a little more)
2 - 4 capfuls peppermint extract ( start with 2)
food coloring if desired

Mix to play dough consistency. Knead well. Roll into balls. Roll balls in granulated sugar and then press into a mold. Pop out of molds and let dry before boxing.
