Chocolate Chip Applesauce Cookies

2 eggs 1 1/2 cups sugar 1 cup shortening 2 tsp baking soda mixed in 2 cups applesauce 4 cups flour 1 tsp cloves 1 tsp cinnamon 1 tsp nutmeg 1 tsp salt 1 12 oz package semi-sweet chocolate chips Mix first 4 ingredients separately. Add dry ingredients, and mix then stir in chocolate chip. Bake at 375 degrees until done.

Brandee's Oreo Cookies

2 German Chocolate Cake mixes 4 eggs 1 tsp. vanilla 1/2 cup butter flavored Crisco Mix and roll into 1 inch balls. Bak at 350 for exactly 8 minutes. DO NOT OVERCOOK. Cool completely. Filling: 3 oz cream cheese softened 2 cups powdered sugar 1/2 cup butter or margarine, softened, 1 tsp. vanilla Mix and put filling between the bottoms of two cookies.

Lemon Cake Mix Cookie Sandwiches

1 box lemon cake mix 1/2 cup oil 2 eggs 1 can lemon frosting 1 cup sugar 1 packet lemonade Kool-Aid Mix first three ingredients together. Roll in 1 inch balls. Mix sugar and lemonade mix and roll balls in sugar mixture. Bake at 350 degrees for 7 minutes or until done. Frost cookies and make into sandwiches.

Almond Crunch Cookies

1 cup sugar
1 cup powdered sigar
1 cup butter softened
1 cup cooking oil
1 tsp. almond extract
2 eggs
3 1/2 cups flour
1 cup whole wheat flour
1 tsp baking soda
1 tsp salt
1 tsp cream of tartar
2 cups chopped almonds (or pecans are good too)
6 oz almond brickle baking chips or Heath bits of Brickle

Combine sugars and butter, bear well.  Add the cooking oil, almond extract and eggs.  Gradually stir in combined dry ingredients.  Stir in nuts and chips.  Refrigerate dough for 30 minutes for easier handling if you want.  Roll into balls and roll in sugar and press with a fork dipped in sugar onto an ungreased cookie sheet.  Bake at 350 degrees for 12 - 15 minutes.

Pumpkin Oatmeal Cookies

1 cup butter
1 cup brown sugar
1 cup sugar
1 teaspoon vanilla
1 egg
1 cup canned pumpkin
2 1.2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 t salt
1 cup instant/quick cooking oats
1 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips

Bake at 350 degrees for about 10 minutes.

Frosted Cream Cheese Sugar Cookie Bars

1 1/2 cups sugar
1 cup butter, softened
8 oz cream cheese, softened
1 egg
1/2 t almond extract
1 teaspoon vanilla
1/2 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups all purpose flour

FROSTING:
1/2 cup butter softened
4 oz cream cheese, softened
3 1/2 cups powdered sugar
3-5 tablespoons milk
1 teaspoon vanilla
food coloring or icing paste

In a large mixing bowl or stand mixer beat the butter, cream cheese, sugar, and egg until nice and frothy. About 4 minutes. Add the vanilla and almond extract and beat for 1 minute more.

In a small bowl combine the flour, baking powder and baking soda. Mix them around so that all ingredients are well incorporated. Add the flour mixture to the butter mixture and beat for about 2 minutes. Press the dough into a large jelly roll (cookie sheet) pan. Bake at 350 degrees for 20 minutes. Let the pan cool completely.

To make the frosting, in a medium sized bowl (or your stand mixer) combine the butter and cream cheese. Beat for about 2 minutes. Add the powdered sugar, milk, vanilla and food coloring. Mix for 1-2 minutes or until smooth. Frost your pan of cookies. Cut the cookies into bars and serve.

Jello Cookies

Sugar cookies with a blast of flavor.
½ cup Margarine
½ cup Butter
1 cup Sugar
1 box Jello gelatin (any flavor, 3oz)
3 Eggs
3 cups Flour
1 tsp. Baking powder
½ tsp. Salt
1. Cream butter, margarine, sugar and Jello until light and fluffy.
2. Add eggs, one at a time and beat thoroughly.
3. Add dry ingredients and mix well.
4. Chill for several hours
5. Use cookie press or roll 1/3 of the dough to ¼ inch thickness. Cut and bake at 375° for 8 minutes on ungreased cookie sheet. Cool and frost if desired.
Makes about 3 dozen

Banana Oatmeal cookies

1/2 cup butter
1 cup sugar
1 cup mashed bananas
1 egg
1 3/4 cup oatmeal
1 tsp. vanilla
1 1/2 cup flour
1 tsp. cinnamon
1/2 tsp. soda
1/2 tsp. salt
1 cup (or more!) chocolate chips

Cream butter and sugar, add egg, banana and oatmeal. Add vanilla, then dry ingredients. Mix well. Fold in chocolate chips. Bake 10 minutes at 350.

Sure Fire Wonders (The Best No Bake Cookies)

2 cups sugar
1 bag (12 oz.) semi-sweet chocolate chips
1 stick butter (not margarine)
1/2 cup milk
dash of salt

Mix all together. Boil gently for 2 - 3 minutes, then add:
1/3 cup peanut butter
1/2 teaspoon vanilla
1/2 cup chopped nuts
3 cups oatmeal
1/2 cup coconut (if desired)

Drop by spoonful onto waxed paper

Pumpkin Cookies w/Caramel Frosting

1 c. shortening
1 c. sugar
1 c. pumpkin
1 egg
2 c. flour
1 tsp. soda
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped walnuts

Cream shortening and sugar. Add pumpkin and egg and cream well. Add combined dry ingredients and mix well. Add vanilla an nuts. Bake 375 degrees for 12-14 minutes.

Frosting:
3 TBSP. butter
4 tsp. milk
1/2 c. brown sugar

Cook until dissolved. Cool and stir in 1 c. podered sugar and 1 tsp. vanilla. Frost cookies while they are still warm.

Cherry Oatmeal Cookies

1 cup butter
3/4 cup sugar
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon soda
1 cup oatmeal
1 cup dried cherries
1 cup toffee bits

Mix butter, sugar, egg and vanilla. Stir in remaining ingredients and mix well. Divide into 3 round logs and wrap in saran wrap and chill in fridge. Bake on parchment paper for about 12 minutes at 350 degrees. This was Dr. Hess' Secret recipe .
