Mint Meltdown Zucchini Cookies

1/2 C butter
1/2 C sugar
1/2 C brown sugar
1 egg
1 t vanilla
1/2 t mint extract
2 1/4 c flour
1/3 c cocoa
1t baking solda
1/2 t salt
1 3/4 c zucchini
1. Preheat oven to 350 degrees
2. Combine flour, cocoa, baking soda, salt and zucchini in a small bowl
3. Cream butter, sugars in a large bowl. Beat in egg, vanilla and mint.
4. Add dry ingredients to wet, fold in zucchini.
5. Bake 8-10 minutes
