Best Zucchini Bread

3 eggs, beaten until fluffy
2 cups sugar
1 cup oil
3 Tablespoons vanilla
2 cups grated zucchini
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 8oz can crushed pineapple
1 cup crushed walnuts

Mix all together. Bake at 350 degrees for one hour. Makes 2 loaves. Remove from pans, cool, and wrap in aluminun foil.
